  • Feed: My Life in Curry, in reply to Russell Brown,

Grey Lynn butchers and Pak n Save on Lincoln Rd seem the other reliable outlets. Cook long and slow unless you have a pressure cooker.

Top tip: When Indians talk about mutton they are talking about goat.

  • Feed: My Life in Curry,

    Nice.

Try the search term "west indian curry" on Google and you'll find a new world of options. Your local butcher may very well sell goat and it's worth a go, even for a novice. Recipes are easy and we have most of the ingredients readily available here.

If you've got SKY Rick Steins trip to Indian is definitely worth a watch.

  • Hard News: Heads Up,

A million years ago I worked at Lambeth Hospital, Landor Road, London Town.

There were a number of patients suffering from what was then called ganja psychosis.

Surprisingly, most were women from Pakistan and India and the odd West Indian woman with little or no friends or supportive family.

The doctors I talked to put it down to their lack of being able to socially integrate, not necessarily their choice of escape.

    Green Seasoning

At the core of many West Indian recipes. http://www.cookingwithria.com/2013/03/trinidad-green-seasoning.html and a search on green seasoning will uncover many variations.

The hack - you can change ingredients and proportions to suit yourself. Make ice cubes, pop it in a jar.

  • Hard News: Kitchen Hacks, in reply to Tom Semmens,

Interestingly I do have have gas but found out that gas hobs? weren't and perhaps still aren't turned up to full.

A few years ago I got a gas tech guy out and asked if I could get any more heat happening. His comment was, "funny, the only other people that ask about this are Chinese and Indians".

He turned the gas up to the max. Not sure if this is still an issue.

  • Hard News: Kitchen Hacks,

    No Knead Bread

One of many recipes here http://www.thekitchn.com/how-to-make-noknead-bread-home-109343 and plenty of variations elsewhere.

It's very hard to screw this up. Many recipes call for dutch ovens, but if you don't have one all you need is some sort of container that will take high heat (450c) and make sure the bits won't melt, a frypan would do. You don't have to worry about the lid on lid off malarkey while baking. And if you're worried about things sticking, bang on some baking paper.

The Staub dutch ovens are ideal for high temp baking.

    My ears were burning

Ah those were heady days… your post Simon also reminded me of the state of technology of the time, esp at Flying Nun.

The monster of a dot matrix printer, so loud it needed a special sound proof shield and ideally its own room. The lengthy hand written faxes Mr Shepherd generated day after day, the massive phone bills generated day after day, rolls and rolls of faxes awaiting you in the morning. And then of course the fading faxes you try and decipher after a couple of months.

On the browser tip, Flock is worth a look and the guys at work are currently looking at IE8 and I’m hearing it might not be too bad.
