I'm guessing mostly based on petal shape (lotus flower petals are wider & more rounded, water lilies more pointy) but I'm no expert.

but a 'Save as' should update the preview/thumbnail – I think

ETA: Theory proven... sort of.

The images you posted were full size, and the system may not like that when making a thumbnail. I resized them using preview to maximum 1200 height, then saved them again.

I get that when I rotate pictures in Preview (Mac) it doesn't always stick in other applications.

If you have access to Photoshop you could rotate to 'Baseline down' and then 'save as' to overwrite any other invisible…
